		<description>That brand had added msg- interesting.  I guess millions of Japanese aren&#039;t getting headaches though. I wonder if there is something else protective in their diet...  I don&#039;t have a problem with naturally occuring MSG.  I bought some bonito flakes and kombu last year so I&#039;ll go ahead and give a go at making my own dashi first.  Thanks!</description>

		<description>Being in the industry, I&#039;ve never really had to look beyond the kitchen I work in to find veal bones. I would suggest looking up any local butchers and giving them a call. Check a few out and choose the one that looks the cleanest, and by all means, befriend those people!

As for the MSG content of instant Dashi, MSG is a naturally occurring  by-product of Konbu, the dried kelp that&#039;s a major ingredient in all Dashi, store bought or home made, so there&#039;s gonna be some MSG involved. Whether or not the company added more is what should be asked, and quite honestly, I wouldn&#039;t know. If it helps, this is the only instant brand I&#039;ve ever seen in a professional kitchen:

This brand can be found at any Japanese market and some high end grocers. I would recommend Noble Fish in Clawson, or One World Market in Novi (owned by the same people, from what I understand).
